Instant Mac and Cheese: Eat Well While On The Go

mug of mac 'n cheeseIf your schedule looks anything like ours, it’s a whirlwind of activity that keeps you on the go from morning until night. And sometimes in the midst of all of that running and planning and organizing and supervising, you forget the little things—like eating! Problem solved, thanks to this fast and delicious Instant Mug o’ Mac & Cheese you can quickly make in the microwave with real ingredients (no powdered cheese here) and in a container that’s perfect for lunch on the go. The best part? You’ll never be able to tell it’s from the microwave—and if you won’t tell, we won’t, either!

We’ve included this super simple recipe so that you can recreate your own mug of yum. Your kids are going to love it, too, and you’ll love that they can have a quick meal without heating up the stove. We can’t, however, guarantee that they’ll put their dish in the dishwasher when they’re done.

Instant Mac and Cheese Ingredients

1/3 cup of your favorite ‘short’ pasta (we like elbow pasta)
½ cup water
¼ cup 1% milk
½ cup shredded cheddar cheese

First, grab your favorite oversized mug and combine the pasta and the water. Microwave on high for two minutes, then stir. Note: Using an oversized mug should help keep the water from overflowing as it comes to a boil. Cook for another two minutes and stir again, repeating one more time if necessary. The water should absorb completely and the pasta should be fully cooked. If not, just add a teaspoon of water and cook another minute. Cooking times will vary depending on your microwave.

Remove it from the microwave and stir in the cheese and milk. Microwave it for another minute and then give it a final stir. All done! Grab a napkin, a drink, and head out the door with your Instant Mug o’ Mac & Cheese.
